Mickey Mouse Gingerbread Cookies
Combining two of my favorite things, Christmas and Disney, these Mickey Mouse gingerbread cookies are perfect for adding a bit of Mickey Mouse to your holiday celebrations!
This soft and chewy gingerbread is sweet and spicy and makes your house smell like Christmas!
It’s also dipped in chocolate and Mickey shaped, what’s not to love?
Gingerbread at Disney World
Gingerbread is a pretty big deal at Disney World!
Every year, Disney World resort hotels impress guests with incredible gingerbread house displays and delicious holiday treats.
You can also find a range of ginger-flavored snacks in the parks, including the famous Mickey Mouse gingerbread cookies!
Ingredients
Everything you need for Mickey Mouse Gingerbread cookies:
170g Butter
165g Brown Sugar
210g Molasses or Treacle
1 Large Egg
400g Flour
1/2 teaspoon Salt
1 teaspoon Baking Soda
1 tablespoon Ginger
1 tablespoon Cinnamon
1/2 teaspoon Nutmeg
For Decoration:
Milk chocolate
Smarties or similar chocolate beans.
Mickey Mouse Gingerbread Cookie Recipe
Make Gingerbread Dough
1. In a bowl, cream together brown sugar and butter until nice and smooth.
2. Add the treacle (or molasses) and egg to the bowl. Mix until combined.
3. Add the flour, baking soda, ginger, cinnamon, nutmeg, and salt. Mix until everything is combined into a smooth dough.
4. Lay out the cling film (plastic wrap) and place dough on top. Flatten the dough into a disc shape and wrap it up tightly.
5. Place the gingerbread dough into the fridge for a minimum of three hours. I left mine overnight ready to bake the cookies the next day!
Make and Bake Your Mickey Mouse Gingerbread Cookies!
6. Preheat oven to 180°C (350°F).
7. Flour your surface and grab your rolling pin!
8. Remove gingerbread from the fridge and roll it to 1/2 cm (1/4 inch) thick. Don’t worry about using plenty of flour, it’ll disappear during baking!
9. Take your Mickey Mouse cookie cutter and cut out your gingerbread.
10. Place your cookies on a baking tray lined with parchment paper.
11. Bake for 10 minutes (don’t overbake or your gingerbread won’t be soft).
12. Place on a wire rack to cool.
Decorate Your Gingerbread
13. Melt chocolate using the microwave or a bain-marie. If using a microwave, microwave in short 10-second bursts and stir to avoid burning.
14. Dip your gingerbread into the melted chocolate – you can dip the ears or face. I did a bit of both!
15. Add Smarties or chocolate beans using the melted chocolate to stick them to the cookies.
16. Once the chocolate has set, eat and enjoy!
More Ideas For Mickey Mouse Gingerbread Cookies
- Have fun decorating the gingerbread! Dip different parts of the cookie or use different sweets such as gumdrops.
- Use red candy melts to dip the bottom of the cookies to replicate Mickey’s shorts.
- Add a bow and make a mix of Mickey’s and Minnies!
- Use green and red sprinkles on the chocolate to add more of a Christmas touch!

Notes
The number of cookies will depend on the size of your cookie cutter.
